Paprika originated in Mexico, but it was Christopher Columbus who brought it to Europe in the 15th century. The spice became popular in Hungary, where it was cultivated and improved over the centuries. However, all cayennes have one thing in common: They’re spicy.

Paprika is divided into three categories—sweet, hot, and smoked—and each one is made from different types of peppers.

Hot paprika, on the other hand, is made from hotter varieties of red peppers, such as cayenne or chili peppers. It has a deeper red color and a much spicier, more intense flavor compared to sweet paprika. Hot paprika adds a fiery kick to dishes and is commonly used in spicy dishes like chili, curry, and spicy sausages. It is also a key ingredient in dishes from regions like Hungary and Spain, where it is used to add heat and flavor to traditional recipes.

However, its spiciness and heat level make it an excellent substitute for paprika powder. It's available in mild, moderately hot, and hot varieties, so you can easily replace any hot paprika variety in your recipe.

The extra ingredients used in sriracha dilutes the sauce which makes it slightly less spicy than the chili-based sambal oelek. Sriracha tends to be sweeter with a hint of garlic whereas, all you can taste in sambal oelek is the rich chili and vinegar flavor.
